Inside pocket, only one on the jacket that looks like the same design as the vests.
Fully plastic buttons, look like material on the vests, probably because of the dye.
I see what you mean about being too many seams. You could get away with the back, but the pockets on the front would be a problem. At least youve got something accurate to use as a sample so that a custom leather guy can match it. You can apply the label and the buttons to a replica vest.

Laziness is a skill that must be practiced everyday.
Ok let's see. All below is what a tailor should be able to do.
1: Removal of collar.
2: Removal of sleeves and re-stitched closed.
3: Removal of inside pockets and placement on inside. The tailor would have to cut in to the leather to make the pockets. Also are there two inside? If not, he can use the extra leather from the sleeves to replicate another pocket.
4: I am assuming that the two outside pockets are just stitched on and should be able to be removed. That is one place that the stitches might show. Maybe there is a leather putty that can fill those up.
5: I think that the only problem you might have is the buttons. I believe the placement is wrong.
Otherwise I don't see it being such a hard conversion. Congrats on the jacket. Even tho it is a jacket, I would still consider it a piece of WARRIORS memorabilia.
On a side note, if you do convert it, you could sell the excess leather to people to make pet vests, vests for figures etc. it would be cool to make a custom figure and have a custom vest with EAST GATE leather.
