Well i guess it would have to depend on the reason for backing down.  whether its respect for the Riffs for being in the position that they are in, or if you realize that you are outnumbered against an anarchist gang like the turnbulls, than there would be a reason to back down.  There would have to be a more logical approach to back down.  Maybe you are a much larger gang like the Riffs so you give pity or honor towards a small underdog gang that is fighting you, or you leave to plane a more strategic attack.  So it basically varies.

Id run from the Riffs, as they are the biggest gang in the city, the turnbulls (c'mon, theyre big, butch and bald) and the savage huns cos they can move like the riffs. mayyyyybe the baseball furies. The orphans are just wimps and so i definiteley would stand my ground.

I think you were spot on....except I wouldn't fight the Savage Huns because I haven't seen them fight yet. You don't know what crazy craft they could lay down upon the battle.
I also wouldn't attempt the ecstatic mental dude at the meeting.....in the wool.....that shouted yeah a lot the clouds.
I'm not really a fighter at all - but if I had to chose ummmmmmm.........maybe HiHats, but only because the hats might fall off and distract them - unless of course they had harsh weapons under the hat which might just be a problem for my fictional gang if we weren't packing.
